S’mores Cookies
Ingredients
170g plain flour
½ tsp baking powder
½ tsp salt
100g butter
100g brown sugar
50g granulated sugar
1 large egg
2 tsp vanilla extract
200g dark chocolate chips
8 large marshmallows
60g digestive biscuits
Makes: 8 cookies
Method
Step 1
Line two baking trays with parchment paper or silicone baking mats.
Step 2
In a large mixing bowl or stand mixer, cream the butter, brown sugar, and granulated sugar together until light and fluffy.
Step 3
Add the egg and beat until well combined. Add the vanilla extract and mix again until incorporated.
Step 4
Add the flour, bicarbonate of soda, baking powder, and salt. Mix using a paddle attachment (or a wooden spoon) until just combined.
Step 5
Fold in the chocolate chips and crushed digestive biscuits until evenly distributed throughout the dough.
Step 6
Scoop out portions of cookie dough. Cup each portion in the palm of your hand and gently press a space in the center. Place a marshmallow in the hollow, then mould the dough around it to seal it inside.
Place the filled dough balls onto a tray that fits in the freezer and freeze for 30 minutes.
Step 7
While the cookies are freezing, preheat the oven to 175°C (347°F).
Once chilled, place five cookies on each prepared tray and bake for 9 minutes.
Remove from the oven and allow the cookies to cool on the tray for 10 minutes before transferring them to a wire rack to cool completely.
