Oreo and Dark Chocolate Cookies

These chunky Oreo and dark chocolate cookies are everything you want in a sweet treat—they’re rich and loaded with gooey chocolate and crunchy cookie bits. Perfectly crisp on the outside with a soft, brownie-like center, they’re a total crowd-pleaser.

Bonus: the dough can be made ahead and chilled, so you're always just minutes away from freshly baked cookie bliss.


Ingredients

  • 150g plain flour

  • 1 tsp baking powder

  • ½ tsp salt

  • 100g butter

  • 100g brown sugar

  • 50g granulated sugar

  • 20g cocoa powder

  • 1 medium egg

  • 1 tsp vanilla extract

  • 1 tbsp milk

  • 6 Oreo cookies, chopped

  • 170g dark chocolate, chopped

  • 6 extra Oreo cookies

Makes: 12 cookies


Method

Step 1

Line 3 large baking trays with greaseproof paper or silicone mats.

Step 2

Melt the butter and let it cool for a few minutes. You can do this in the microwave in 30-second bursts.

Step 3

While the butter cools, roughly chop the chocolate and crush the Oreos.

Step 4

In a separate bowl, add the flour, salt, and baking powder. Give it a quick mix with a fork or whisk, then set aside.

Step 5

Using a stand or handheld mixer, beat the cooled butter and sugars together until well combined.

Step 6

Add the egg and continue mixing until the mixture is light and smooth.

Step 7

Mix in the vanilla extract until fully incorporated.

Step 8

Gradually add the flour mixture and beat on a low speed until just combined—don’t over mix. Then add the tablespoon of milk.

Step 9

Fold in the chopped Oreos and dark chocolate. Reserve a few Oreo pieces to press on top of the cookies later.

Step 10

Scoop the dough using a large ice cream scoop for chunky cookies. Press the reserved Oreo pieces onto the tops.

Carefully place the dough balls on a tray that fits in your freezer, and chill for 30 minutes (or refrigerate overnight).
While the cookie dough chills, preheat your oven to 175°C.

Step 11

Transfer the dough balls to your prepared trays, spacing them well apart—six cookies per tray works well, as they’ll spread while baking.
Bake for 9 minutes.

Step 12

Remove the cookies from the oven, gently push half an Oreo in to the top of each cookie. Let them cool on the tray for 5 minutes, then transfer them to a wire rack to cool completely.

Remember, the cookies will continue to cook slightly on the tray after being removed from the oven, so don’t wait for them to fully firm up while baking.
