Cranberry, orange and dark chocolate cookies

- 150g plain flour
- 1 tsp baking powder
- 1 tsp salt
- 100g butter, softened
- 100g brown sugar
- 50g granulated sugar
- 1 medium egg
- 1 tsp organce extract
- 170g dark chocolate chips
- 130g dried cranberries

Method
Step 1
Line 2 large baking trays with greaseproof paper and per-heat the oven to 175
Step 2
Place the butter in a microwave safe bowl, and microwave for 30 seconds, the butter should be soft to touch but not melted.
Step 3
Place 100g of brown sugar and 50g of granulated sugar in a mixing bowl. Add the softened butter and beat together on a medium speed for 2 minutes. Scape down the sides of the bowl using a rubber spatular so that the butter sugar mixture isn’t stuck to the sides.
Step 4
Add the egg, and beat together for another 30 seconds then add the orange extract, and continue to beat together for another 30 seconds.
Step 5
Add 150g of flour, a tsp salt anda tsp of baking powder to the mixing bowl and beat together, stop before the flour is completely mixed in.
Step 6
Weigh out 130g of dried cranberries and add a tablespoon of flour, using your hands mix the flour and cranberries together, so they’re coated in flour. This will prevent them sticking together and help them spread throughout the cookie dough.
Step 7
Add the 170g of chocolate chips and the cranberries to the cookie dough and beat together until the chocolate. and cranberries are mixed through.
Using a medium size ice-cream scoop or a tablespoon portion out the cookie dough into 12 balls.
Place 6 balls per tray and bake for 9 minutes.
Step 8
Allow the cookies to cool on the tray for 5 minutes then transfer to a wire wrack to cool fully.
